Der Geschmack von Tonkabohnen erinnert an Vanille und Mandel. Die Tonkabohne findet Verwendung in feinen Desserts und Süßspeisen. Man kann mit Tonkabohnen Cremes, Kuchen, süßes Gebäck oder Eis veredeln. Besonders gut macht sich die feine blumige Note der Tonkabohne beispielsweise in Panna Cotta oder Crème Brulée.
